This year’s spotlight falls on two multi-awarded talents from Australia, Chef Marc Nacua and Chef Princess Anne Uy, who have made powerful contributions to the country’s multicultural dining scene while proudly elevating Filipino flavors abroad.

Held last September 18, 2025 at Guevarra’s in San Juan City, the showcase united heritage and innovation in a special dining experience. The evening featured signature dishes that honored classic recipes while embracing modern techniques, offering guests a thoughtful bridge between tradition and contemporary craft.
Two award-winning Filipino chefs shaping Australia’s food scene

A celebrated pastry specialist, Marc Nacua brings more than 15 years of professional experience from Melbourne’s Crown Casino and his current role at dnata Inflight Catering. Known for precision and creativity, he was named Dessert Champion at the 2024 World Food Championship – Australia and placed Top 7 at the World Food Championship in Indianapolis. His work translates Filipino inspirations into refined desserts that balance artistry and bold flavors.

Chef Princess Anne Uy’s leadership has been felt across Nobu, Crown Casino, and Marvel Stadium, where she oversaw large-scale catering for up to 60,000 guests during headlining shows by Nicki Minaj, U2, and Lady Gaga. Her accolades include the Silver Knife Bocuse d’Or Australia – National in 2025 and second place in Seafood at the 2023 World Food Championship in Dallas. Her style fuses Filipino taste memories with Japanese discipline and modern Australian techniques, pushing boundaries while honoring her roots.
A menu that reimagines Filipino favorites with global flair
For the Manila presentation, both chefs crafted a menu that paid homage to beloved staples yet welcomed international influence. Chef Princess Anne Uy served Umami Lechon Belly Roll, Prawn Toast with Kare-Kare Bonito, Chicken Moringa Chawanmushi, and Seafood Udon. Chef Marc Earlmand Nacua complemented the spread with Dried Mango Rum Baba, Piñacolada Pavlova, and Winter Morning. Each plate was designed to spark recognition and surprise in equal measure.
