After claiming the 10th spot from 32nd in the 50 Top Pizzas APAC 2023 held in Tokyo, Crosta Pizzeria is definitely ready to embark on another crunchy innovation as headed by Japan’s #1 Pizzaiolo Chef Yuichi Abellare Ito, alongside his sister Chef Naomi Ito, who’s working at the 1-Michelin starred classic French restaurant Signature and Tapas Molecular Bar at The Mandarin Oriental Tokyo.
Bits and Bites of Crosta Pizzeria’s Pizza Omakase
Amidst the pandemic, Crosta has soared in popularity, gaining a dedicated following among locals who can’t resist their phenomenal sourdough pizzas. Baked to perfection in a brick oven, each slice boasts an airy, crunchy, and delightfully chewy crust that has turned this pizzeria into a true cult favorite. This year, as Chef Ito joins the roster of the best pizzerias in Asia Pacific, a new era of pizza slices emerges, presenting a fresh and innovative approach to crafting the beloved Italian classic.
Early this month, from June 8 to 10, Crosta initiated an intimate 12-seat chefs-table experience at One World Kitchen in Makati City. Refusing to contain their ideas in a box, Crosta brings to the Philippines Chef Yuichi’s concept of pizza omakase.
Filipino diners were treated to an unforgettable experience during the highly anticipated three-day pop-up event, which sold out quickly. Embracing the Japanese concept of “omakase” or “I’ll leave it up to you”, the talented chefs unleashed their creativity, curating a menu inspired by the freshest ingredients of the day. With their expert techniques and heartfelt emotions, they crafted dishes that left a lasting impression on consumers, ensuring a dining experience that will be cherished and remembered.
During the event, Chef Yuichi showcased his exceptional Japanese culinary skills by expertly crafting the beloved Italian dish. His creative genius was on display as he combined premium imported and local ingredients, such as Kyoto duck, caviar, and rock lobster, in a delectable pizza set. Elevating the overall experience, a carefully curated selection of fine wines added an extra touch of luxury and sophistication.
The overall dining experience was actually a precursor to what Crosta has in mind. As per the co-owner, Ingga Cabangon-Chua, during the preview of the pizza omakase, they are bound to spearhead a two-concept-in-one space that features Chef Yuichi’s signature omakase and a more fast-casual dining setup. “Things are going to keep evolving as Chef Yuichi also sees what palate the Filipino market is looking for. For now, we have more things lined up. It may not be another omakase, it might be a collaboration with another chef, but we are looking to do more interesting things.”
